Bird's Nests with Rock Sugar (Traditional Recipe)

INGREDIENTS (for 2-3 persons)
1. Bird Nest (3 pieces)
2. 2-3 rice bowl of room temperature water
3. Rock Sugar (to your taste)

STEPS:
1. Soak 3 pieces of Bird's Nest for 10mins with 2-3 rice bowls of water.
2. Pour away the water after 10 mins, and refill with water for another 50 mins.
3. Keep the water after 50 mins for brewing as it may contain some mineral in the water.
4. For Nest Cake, double boil for 1 hour and 1.5 hour for Nest Cup.
5. Once ready, add in some rock sugar to your taste and boil it for another 10 mins.
6. Stir lightly after 10 mins, off the fire and ready to serve.
