Bird's Nest Soup
Bird's Nest with Rock Sugar
INGREDIENTS (for 2-3 persons):
- Bird’s Nest (3 pieces)
- 2-3 rice bowls of room temperature water
- Rock sugar (to your taste)
STEPS:
- Fill water and soak a piece of Bird’s Nest in each bowl till it is soft and expanded (30mins for House Bird’s Nest, 60 mins for Cave Bird’s Nest).
- After soaking, use a tweezer to remove tiny feathers (if any).
- Pour 2-3 bowls of water into a large pot, place the bowls of soaked Bird’s Nests into the pot, and double boil the Bird’s Nests (30mins for House Bird’s Nest, 60 – 90 mins for Cave Bird’s Nest).
- Once cooked, add rock sugar to taste and brew it for another 10 mins.
- Stir slightly before serve.
Bird's Nest with American Ginseng & Red Dates
INGREDIENTS (for 2-3 persons):
- Bird’s Nest (3 pieces)
- 2-3 rice bowls of room temperature water (for brewing purposes)
- American ginseng (to your preferences)
- Seedless red dates (4-6 pieces)
- Rock sugar (to your taste)
STEPS:
- Fill water and soak a piece of Bird’s Nest in each bowl till it is soft and expanded (30mins for House Bird’s Nest, 60 mins for Cave Bird’s Nest).
- After soaking, use a tweezer to remove tiny feathers (if any).
- Pour 2-3 bowls of water into a large pot, place the bowls of soaked Bird’s Nests into the pot, and double boil the Bird’s Nests (30mins for House Bird’s Nest, 60 – 90 mins for Cave Bird’s Nest).

Bird's Nest with Chicken Congee and Scallop
INGREDIENTS (for 2-3 persons):
- Brewed Bird’s Nest – 3 pieces (you may refer to the first recipe “Bird’s Nest with Rock Sugar” on how to brew Bird’s Nest.)
- Rice – 1 to 2 cups
- Chicken – 1/2
- Scallop – 3 – 4 pieces
- Ginger – 3 – 6 slices
- Spring onion
- Salt
STEPS:
- Clean the chicken, cut into pieces and remove the skin of the chicken.
- Boil the chicken with ginger for 20 minutes. Leave the boiled chicken soup for congee later.
- Remove the chicken, tear it to fine shreds. Bones of the chicken to be put aside.
- Boil the rice with scallop chicken soup until cooked, add in chicken shreds till it is soft. Add in the brewed Bird’s Nest.
- You may add a bit of salt, and spring onion after the congee is cooked.
- Serve while it is hot.
Bird's Nest with Prawn Congee and Scallop
INGREDIENTS (for 2-3 persons):
- Brewed Bird’s Nest – 3 pieces (you may refer to the first recipe “Bird’s Nest with Rock Sugar” on how to brew Bird’s Nest.)
- Cleaned prawns – 10 pieces
- Scallops – 3 – 4 pieces
- 1-2 cups of rice
- Pig’s / chicken’s bones – 300 – 500 grams
- Spring onion
- Salt
STEPS:
- Boil the pig’s / chicken’s bones together with 1-2 cups of rice until the rice is cooked.
- Remove the pig’s / chicken’s bones. Turn the fire to slow.
- Add in the cleaned prawns and stir for 5 mins.
- Put in the brewed Bird’s Nest and brew it for another 3 mins.
- Add in a bit of salt (to your taste) and stir well.
- Spread the spring onion and serve while hot.
